Wonderful article, and I loved following your restaurant sojourn in NYC. Yummy times! My go-to eggplant dish is one I got from my mother. It's called "Eggplant Patrice" so named after the popular singer Patrice Munsel (died in 2016 at age 91.) She supposedly created this dish, and one of her family members was a bridge playing buddy of my Mom's and passed it on. It's layers of eggplant, tomatoes, peppers, onions, seasonings and cheese - sort of a layered ratatouille. Your article reminded me that it's a perfect time of year to make it again! Thanks!
I have had babaganoush (can't remember how you spelled it) at the Mediterranean Deli and it is fabulous! But Harb's dish is the one I'm craving! Lucky you and lucky Donna!
Don’t forget moussaka!! Eggplant isn’t the center of attention in that Greek dish, because -bechamel sauce. But it’s an essential element of it, and a wonderful meal in one casserole.
